Zucchini Slice

Alex and I have been telling people we have a zucchini slice formula for years. I decided to finally put it on the web.

The formula is based on the Taste.com.au zucchini slice recipe. It will let you adjust the ingredient quantities according to how much you have on hand. If you've never made a zucchini slice before, I recommend starting with the recipe as written on the Taste.com.au website.

Ingredients

  • 5 egg(s)
  • 150 g (1 cup) self-raising flour, sifted
  • 375 g zucchini, grated
  • 1 large onion, finely chopped (optional)
  • 125 g (1 cup) grated cheddar cheese
  • 60 ml (1/4 cup) vegetable oil

Method

  1. Preheat oven to 170C.
  2. Beat the eggs in a large bowl until combined. Add the flour and beat until smooth, then add zucchini, onion, bacon, cheese and oil and stir to combine.
  3. Grease and line a 30 x 20 cm (600 cm²) lamington pan. Pour into the prepared pan and bake in oven until cooked through and lightly browned on top (about 30 minutes for a 5 egg slice).

Adjust quantities

Notes

  • Eggs are rounded to the nearest whole egg
  • Onion is rounded to the nearest 1/4 onion
  • Everything else is rounded to the nearest 5.
  • Pan size is given as Length x Width in cm. Use your best judgement with regard to the pan size - if using a smaller pan than recommended, increase the cooking time a bit.
  • Baking time is too difficult to calculate - use your best judgement.

Mix-Ins (Optional)

For the base (5 egg) recipe:

  • Mint: To taste. Try 1 tbsp fresh or 1 tsp dried
  • Bacon: Add 200g chopped rindless bacon
  • Carrot: Add 1 grated carrot
  • Halloumi: Add some diced halloumi
  • Sundried tomato: Add a handful of pieces of diced sundried or semi-dried tomato

Volume Conversion

  • 150 g of flour is 1 cup
  • 125 g grated cheese is 1 cup
  • 240 mL oil is 1 cup. As a reminder, 1 (AUS/NZ) tablespoon is 20mL, and 1 tsp is 5mL.
