Spiced Rice (Instant Pot)

A simple pressure cooker rice with spices. Makes a great accompaniment to dahl.


Ingredients

  • 1 1/4 cups basmati rice
  • 1 3/4 cups water
  • 1 tbsp olive oil
  • 1/2 tsp stock powder (chicken or vegetable)

Spices

  • 1 tsp sesame seeds
  • 1 tsp cumin seeds
  • 1 tsp yellow or brown mustard seeds
  • 1 cinnamon stick, broken

Instructions

  1. Rinse the rice in a sieve and leave it to drain while you complete the rest of the steps.
  2. Start the Instant Pot in Saute mode, medium temperature. Add 1 tbsp olive oil to the inner pot.
  3. When the oil is heated, add the spices. Let the spices sizzle for 1 minute, then remove the cinnamon stick before adding the rice and water. Stir in the stock powder.
  4. Put the lid on the Instant Pot, hit the 'cancel' button and set to Pressure Cook for 5 minutes on high. The Instant Pot will come to pressure (5+ minutes) and then start the timer.
  5. When the pressure cooker beeps, let it naturally release for 10 minutes before opening and fluffing with a fork.
