Spiced Rice (Instant Pot)
A simple pressure cooker rice with spices. Makes a great accompaniment to dahl.
Ingredients
- 1 1/4 cups basmati rice
- 1 3/4 cups water
- 1 tbsp olive oil
- 1/2 tsp stock powder (chicken or vegetable)
Spices
- 1 tsp sesame seeds
- 1 tsp cumin seeds
- 1 tsp yellow or brown mustard seeds
- 1 cinnamon stick, broken
Instructions
- Rinse the rice in a sieve and leave it to drain while you complete the rest of the steps.
- Start the Instant Pot in Saute mode, medium temperature. Add 1 tbsp olive oil to the inner pot.
- When the oil is heated, add the spices. Let the spices sizzle for 1 minute, then remove the cinnamon stick before adding the rice and water. Stir in the stock powder.
- Put the lid on the Instant Pot, hit the 'cancel' button and set to Pressure Cook for 5 minutes on high. The Instant Pot will come to pressure (5+ minutes) and then start the timer.
- When the pressure cooker beeps, let it naturally release for 10 minutes before opening and fluffing with a fork.
