Mexican Rice Bowls
Cilantro lime rice with burrito-style toppings. Not an authentic Mexican recipe!
Ingredients
Rice
- 1.5 cups jasmine or long grain white rice
- 1 3/4 cups water
- 1/2 tsp chicken-style stock powder
- 1 tbsp (40 ml) oil, divided
- 1 lime, juiced
- 2 tbsp chopped fresh coriander/cilantro
Toppings
- Salsa
- Guacamole
- Sour Cream
- Lettuce, shredded
- Tomato, chopped
- Shredded cheese
- Protein of choice, cooked with taco seasoning
Instructions
Rice recipe adapted from Skinny Taste.
- Add the rice, water, 2 tsp of the oil and stock powder to the pressure cooker pot and stir.
- Cover and cook on high pressure 3 minutes. When timer beeps, use a natural pressure release for 10 minutes.
- After 10 minutes do a quick pressure release and fluff rice with a fork. Add chopped coriander/cilantro, lime juice, and remaining oil. Toss until thoroughly mixed.
- Portion rice into bowls and add toppings to taste.
