Mexican Rice Bowls

Cilantro lime rice with burrito-style toppings. Not an authentic Mexican recipe!


Ingredients

Rice

  • 1.5 cups jasmine or long grain white rice
  • 1 3/4 cups water
  • 1/2 tsp chicken-style stock powder
  • 1 tbsp (40 ml) oil, divided
  • 1 lime, juiced
  • 2 tbsp chopped fresh coriander/cilantro

Toppings

  • Salsa
  • Guacamole
  • Sour Cream
  • Lettuce, shredded
  • Tomato, chopped
  • Shredded cheese
  • Protein of choice, cooked with taco seasoning

Instructions

Rice recipe adapted from Skinny Taste.

  1. Add the rice, water, 2 tsp of the oil and stock powder to the pressure cooker pot and stir.
  2. Cover and cook on high pressure 3 minutes. When timer beeps, use a natural pressure release for 10 minutes.
  3. After 10 minutes do a quick pressure release and fluff rice with a fork. Add chopped coriander/cilantro, lime juice, and remaining oil. Toss until thoroughly mixed.
  4. Portion rice into bowls and add toppings to taste.
